Environmental impact
The objective of the scientific articles that I share below was to evaluate the environmental impact of different types of diets, on natural resources such as water, or on climate change.
A quantitative estimation of the water footprint of the Mexican diet, corrected for washing and cooking water
In this article we propose a methodology to calculate the water footprint of the diet in Mexico. In addition, a catalog of water footprints of different foods is presented that can help you know how much water you use when eating.
Eat Well to Fight Obesity… and Save Water: The Water Footprint of Different Diets and Caloric Intake and Its Relationship With Adiposity
In this article we calculate the water used to produce the diets consumed by people who live with different body sizes. We use body fat indicators such as body fat percentage, visceral fat, waist circumference, among others. We realized that eating more than our requirements, in addition to generating health problems, uses more water.
The water footprint and nutritional implications of diet change in Mexico: a principal component analysis
In this article we calculate the water used to produce the diets consumed by people who live with different body sizes. We use body fat indicators such as body fat percentage, visceral fat, waist circumference, among others. We realized that eating more than our requirements, in addition to generating health problems, uses more water.
The Relationship between Consumption, Socioeconomic Level and Reasons of Tomato Intake in Mexico
This article explores the effects of intensive production for the export of red tomatoes in Mexico. We find that, if we continue with the current production rate, in addition to significantly deteriorating the fertility of the land, biodiversity and water use, such a basic food can become a luxury for Mexicans.
Impact of berries production on the eating behavior in a population of Jalisco, Mexico
This article, which was one of the products of my bachelor's thesis, explores how berry production in Mexico generates food vulnerability, by displacing the production of basic foods such as corn and beans. However, its nutritional profile and economic value make this extremely controversial topic.

Effects of food on health and gut microbiota
The objective of the scientific articles that I share below was to evaluate the environmental impact of different types of diets, on natural resources such as water, or on climate change.
Towards the characterisation of sustainable diet’s gut microbiota composition and functions: A narrative review
In this article we present the effects that sustainable diets, which are mainly plant-based, have on the intestinal microbiota.
Sustainable-psycho-nutritional intervention program for a sustainable diet (the 'NutriSOS' study) and its effects on eating behavior, diet quality, nutritional status, physical activity, metabolic biomarkers, gut microbiota and water and carbon footprints in Mexican population: study protocol of an mHealth randomized controlled trial
This is one of the most important articles of my career, since it tests the effects of a sustainable diet on the environment, but also on health indicators, such as blood glucose, cholesterol, triglycerides, body weight, fat and muscle, blood pressure and intestinal microbiota.
Diet as a modulator of the intestinal microbiota and immune response: relevance in COVID-19
In this book chapter we explore the effects that some nutrients and foods have on the prevention and severity of COVID-19.

Technologies for Sustainable Nutrition
The objective of the scientific articles that I share below was to evaluate the environmental impact of different types of diets, on natural resources such as water, or on climate change.
Development of a Mexican online nutritional ecologic software for dietary assessment, automatic calculation of diet quality, and dietary environmental impact
In this article we design and develop an ecological nutritional software called Nutriecology, which not only calculates the energy and nutrient content of the diet, but also automatically calculates its environmental impact and the quality of the diet.
Parents’ mHealth App for Promoting Healthy Eating Behaviors in Children: Feasibility, Acceptability, and Pilot Study
In this article I collaborated with the main authors of the article to design a mobile application to improve the eating habits of children, through their parents.
